INGREDIENTS
A whole-grain bagel and chicken make this a
filling lunch that\'s much healthier than a chicken
salad sandwich you\'d buy.
INGREDIENTS:
½ cup (125 mL) chopped cooked chicken
breast
¼ cup (65 mL) each finely chopped red pepper,
cucumber and mango
2 tablespoons (30 mL) sliced green onion
¼ cup (65 mL) plain low-fat yogurt
¼ teaspoon (2 mL) each salt and fresh cracked
pepper
1 tablespoon (15 mL) lime juice
1 tablespoon (15 mL) chopped fresh cilantro,
dhania (coriander) or coriander
1 whole-grain bagel
1 piece leaf lettuce
METHOD
In a medium-size bowl, combine chicken, red
pepper, cucumber, mango and green onion. Stir
in yogurt, salt, pepper and lime juice until well
combined. Sprinkle with cilantro and toss to
combine.
Slice bagel in half horizontally. Arrange lettuce
over cut side of bottom half. Top with chicken
salad mixture. Cover with top half of bagel.
