INGREDIENTS
Cake 4 eggs 200g sugar 1 teaspoon. Vanilla 200g flour 1 teaspoon. Baking powder 100g butter, melted SYRUP1 Cup boiling water 3tbsp. Strawberry jam 1 - 2 teaspoon. Food coloring ( red or pink )150 - 200g desiccated coconut
METHOD
In a bowl add eggs sugar and vanilla and beat till light and creamy.
Now add in the flour and baking powder and add in half fold in gently and fold in the rest.
Now fold in the melted butter.
Once well combined add the batter to the muffin pan ( make sure to Grease the tray with butter)
bake in a preheat oven @180°c for 15 to 18 minutes
While baking make the syrup.
In a bowl add all the ingredients and mix well. Expect desiccated coconut
Once the cake is bake let it cool slightly and add to the syrup and coat all sides and dip in the desiccated coconut
NOTE: I added red food coloring on the request of my son. Traditionally it's pink, if you would like to keep it Traditional.
