INGREDIENTS
Store bought tortillas or similar
Chilli loaf polony or similar (finely chopped)Mashed potatoes (season with black pepper)Cooked sweetcorn and peas1 purple onion finely dicedGrated cheeseChilli sauce or tomato sauce
METHOD
In a saucepan heat oil and add diced onion,cook until soft.Next, add the finely diced polony and cook until crispy,add in the cooked sweetcorn and peas,stir well.Turn off the heat.
On a plate,take one tortilla,spread chilli sauce or tomato sauce if using.
Then,spread an even layer of seasoned mashed potatoes,followed by the polony,corn and peas mixture.
Top with grated cheese and fold in half.
In a non-stick pan heat a tablespoon of cooking oil. Add the quesadilla and cook until golden brown,enjoy as a light snack!
