INGREDIENTS
Birria stew500g rump or sirloin steak cut into large chunks2 red peppers halved and deseeded2 yellow peppers2 paprika peppers2 jalapeno peppers 1 red cayenne chilli 1 onion roughly chopped1 can whole peeled tomato 3 cloves garlic peeled 1 teaspoon dhana jeera powder1 teaspoon chilli powder 1 teaspoon curry powder 1 teaspoon thyme Salt and pepper to taste ½ litre Stock1 tablespoon Worcestershire sauce
Prepare Dozen mini tortilla wraps / mini roti.Grated mozzarella Chopped dhania (coriander)Diced onionLemon wedges
METHOD
Add veggies and spices to food processor and blend to puree.Strain through sieve to remove pulp.Brown steak in Dutch oven or heavy pot.Remove steak, and add in veg puree.Cook until simmersAdd steak back to pot.Add stock and worcestershire sauce.Cover and cook on low for 3-4hrs until steak is tender.
Remove steak with a ladle of gravy and shred.Reserve 1 cup of gravy
Dip tortilla in gravy and toast in dry pan on both sidesSprinkle cheese all overAdd shredded steak, little chopped dhania (coriander) and diced onion.Fold over into half moon shape.Toast both sides until crispy and crunchy.
Serve with dipping bowl of gravy, lemon wedges.
