INGREDIENTS
Cookie:125g butter¾ cup castor sugar¼ cup brown sugar
1 egg
1 and ½ cups flour, lightly scooped½ cup cocoa powder, good quality1 teaspoon bicarbonate of soda
Cream:100g butter1 and ½ cups icing sugar
METHOD
CookieCream the butter and sugars.Add in egg. Mix very well.Add in whisked dry ingredients.Mix well.Divide into 10g balls (1 small teaspoon of dough).Place on greased tray and flatten slightly with a cup.Bake in a well preheated oven on 180 degrees for 6 minutes or so until set on the edges. Allow to cool and harden on tray for 15 minutes before removing to wire cooling rack. Cool completely before filling and storing.
CreamCream together very well the butter and sugar. Now use to fill your sandwich Cookies. Leftovers may be frozen/refrigerated for a few days in a sealed Tupperware.

>may add a drop of black colouring for the commercial cookie look.
