INGREDIENTS
1 kg chicken wings with skin
Marinade:2 teaspoons salt1 teaspoon chilli powder1 teaspoon paprika1 teaspoon brown sugar2 teaspoons mixed herbs1 teaspoon black pepper1 teaspoon garlic powderJuice of half a medium lemonGround green chillies, to tasteDrizzle of olive oil
Buffalo Sauce:½ cup water2 tablespoons white vinegar½ cup tomato sauce½ cup sweet chilli sauce1 heaped teaspoon chilli powder1 teaspoon cayenne pepper1 teaspoon garlic powder 65g butter
Honey and salt, to taste
METHOD
Marinate wings overnight, refrigerated.
Grease a large roasting tray very well. Add a drizzle of oil.Preheat oven to 190°c fan assist.Lay the wings (skin side down) on prepared tray and roast in oven for about 45 minutes or until done. Remember to rotate the tray halfway through for even browning.
In the meantime, bring sauce ingredients to a boil. Boil for a minute then remove from heat. Cool and taste. Now add a little salt and honey to taste.
Remove wings into pyrex and pour the (hot) buffalo sauce over. Add in lemon wedges and serve immediately with lovely spice rice and chips. Enjoy 🍟🔥
