INGREDIENTS
600g butter 298g icing sugar 3 eggs 1 teaspoon. Vanilla 1 teaspoon. Salt ¾ teaspoon. Baking powder 1120g cake flour
Cookie stick1 tablespoon. Cocoa powder 150g milk chocolate 1 tablespoon. Oil 2 teaspoon. Chopped nuts (I used almonds)
Triangle cookie100g white chocolate 1 tablespoon. Oil 2 teaspoon. Sesame seed
Bisscoff60g crushed, Bisscoff biscuits 120g Cramel chocolate 1 tablespoon. Oil30g crushed bisscoff biscuits
Lemon cookieZest of 1 lemon¾c icing sugar Lemon juice Water Yellow food coloring
Chocolate chip cookies ¼c chocolate chip Leftover melted chocolate for the chocolate sticks.
METHOD
In a large bowl add butter and icing sugar and beat until it comes together.
Now add in 1 egg at a time beating well after each addition.
When adding in the last egg add in the vanilla as well. This is optional, I just add it in to insure that I don't add up with the eggy smelling cookies.
Now add in the baking powder and salt, and add the flour little bit at a time beating well. I added only the flour.
Now transfer the dough to a clean working surface. And add in the remaining flour and knead until it forms a soft dough.
Once the dough forms roll into a log and divide into 5 portions.
Cookie 1: chocolate stick Add in 1 tablespoon Cocoa powder and knead until distributed evenlyNow using a 1 tabletspoon measuring spoon scoop the dough and roll into a log.
Place them in a tray lined with parchment paper.
Bake in a preheated oven at 170c for 12 to 14 minutes.
Once bake remove form the tray and let it cool down completely.
In a bowl add 150g chocolate, and microwave in a 30 blast, until the chocolate has melted.Once the has chocolate melted add in 1 tablespoon oil and mix until a smooth paste forms Now add in 2 teaspoon of chopped nuts. And mix wellDip the cookies and coat wellRemove from the chocolate let the excess chocolate drip off and place on a parchment paper and let the chocolate dry completely
Cookie 2: triangle cookies
Place the dough onto of a parchment paper and and roll to a inch thickens and using a triangle cutter cut them and place them on the baking tray and bake them @170c for 12 to 15 minutes.
Once baked remove form the tray and let the cookie cool completely.
In a bowl add 100g white chocolate and 1 tablespoon oil and microwave in a 30 seconds blast until the chocolate has melted completely. And in 2 teaspoon sesame seed and mix until distributed evenly.
Dip the cookies in and let the excess chocolate drip off.
Cookie 3: bisscoff
To the cookie dough add in 60g crushed bisscoff cookies.And knead until all the cookies crumbs are distributed evenly.
Roll the dough to a inch thickens, and cut the excess using the ruler and cut into a rectangle and place the cookie in a baking tray lined with parchment paper and bake in a preheated oven at 170c for 12 to 15 minutes.
Once the cookies has cooled completely.In a bowl add 120g Cramel chocolate ad 1 tablespoon. Oil and microwave in a 30 seconds blast until the chocolate has melted. Add in 30g crushed bisscoff biscuits and mix well
Dip the cookies and coat well Remove the excess chocolate and place on a parchment paper and sprinkle some crushed bisscoff cookies on on sice of the cookie
Cookies 4: To this dough add in the zest of the Lemon and knead and roll into a inch thickens and cut using and cookies cutter you like. And place on a tray lined with parchment paper and bake in a preheated oven at 170c for 12 to 15 minutes.
In a bow add ¾ cup icing sugar 1 tablespoon lemon juice and yellow food and litte water and mix until a thick mixture forms and now add yellow coloring and mix will until the color is mixed well.
Now Dip the cookie in the yellow paste and let the excess drip of then place on a parchment paper and let the Glaze harden.
Cookie 5: chocolate chip cookie To the dough add ¼ cup chocolate chips and knead well
Roll the dough into a inch thickens and cut using a square shaped cutter and cut the cookie. Place in a tray lined with parchment paper and bake in a preheated oven at 170c for 12 to 15 minutes.
Once baked and cooled using the leftover chocolate from the chocolate stick.Add the chocolate into a small bowl and dip half the cookie in the chocolate mixture and let the chocolate drip off and place in the parchment paper to dry off.
