Using ingredients on hand
RECIPE
In a bowl sieve2 Cups Flour2 Heaped teaspoon Baking Powder¼ teaspoon BicarbMix well and keep aside
In a separate bowl beat well 3 Eggs till light and fluffyAdd 2 teaspoon full Vanilla essenceKept this aside for later
In a pot on stoveMelt 125g BUTTER¾ cup Brown sugar1 teaspoon Robertsons Mixed SpiceFor cakes etc½ teaspoon Cinnamon powder½ teaspoon Ginger powder(Optional)+- handful of finely chopped EACH Cashew nuts, Pecans, almonds, sultanas, raisinsGlaced Cherries and+(Chopped dates Optional)Stir and Boil all togetherRemove from stove and cool completely
NowAdd the beaten egg mixture to this coolMixture
Gradually Add the FlourMixing lightlyMix wellIn a baking trayPlace Foil and grease itPour all the cake mixtureSprinkle Red cherries and flaked almonds in top
Bake in pre-heated oven for180* for +-1 HourAllow to coolServing suggestionServe Cold or warm with Vanilla CustardEnjoy
