INGREDIENTS
1 cup flour 2 tablespoon mazina flour 2 tablespoon curd ( yogurt)1 teaspoon oil½ teaspoon orange food colour Water (as needed)Oil for frying jalebi.
For sugar syrup 3 cup white sugar 1 and ½ ( haf) cup water1 tablespoon lemon juice1 teaspoon cardamom powder Pinch of orange food colour.
METHOD
For batter. . In a mixing bowl add flour, mazina flour,curd,oil and food colour . Gradually add water and wishk well3.Make sure the batter smooth and lumpy free.The consistency should be medium not too thick and not too runny..cover and let it rest for 30 minutes or 1 hour .In a pan add auger and water heat untill reaches a one string consistency ( slightly sticky between a fingers).add cardamom powder, food colour and lemon juice keep warm..Heat oil in a wide panFill jalebi batter in a piping bag or jalebi maker bottle .pipe spiral shapes directly into the hot oil. Fry on medium heat crisp and golden.2.Soak in sugar syrup Immediately dip fried jalebi into warm sugar syrup .Let them soak 20 to 30 secon, then remove.3. Serve hot. crispy golden jalebi are ready to serve.
INFO & TIPS
Jalebi can stay fresh about 1 day at room temperature( crispy test)
