Rich basmati rice pudding, a swirl of salted caramel, chilled to perfection, and topped with crunchy pheni + a side of jalebi for that extra wow.

Ingredients
¼ cup basmati rice (soaked 30 minutes)
2 tablespoon rice flour
5 cups milk
½ – ¾ tin condensed milk (I used homemade condensed milk)
½ teaspoon cardamom powder
2 tablespoon almond paste
2–3 tablespoon salted caramel sauce (adjust to taste)
Pheni (for garnish)
Sliced almonds (for garnish)
Jalebi (for serving)
Method
1. Drain the soaked rice. Add rice flour and grind to a coarse texture.
2. Bring milk to a boil, then reduce heat to a gentle simmer.
3. Stir in the ground rice mixture and cook until rice is soft and mixture thickens.
4. Add condensed milk, cardamom powder, and almond paste. Mix well.
5. Stir in salted caramel sauce until fully combined.
6. Allow to cool, then refrigerate until chilled.
To Serve
Pour the chilled kheer into serving bowls.
Sprinkle with pheni and sliced almonds.
Garnish with a piece of jalebi on the side for a sweet, crunchy finish.
