Aloo Palak Masala
Spinach & Potato Masala

INGREDIENTS
2 potatoes, cubed & fried
1 bunch spinach, washed, chopped & cooked
5 green chillies, chopped
1 tablespoon ginger-garlic paste
1 onion, chopped
1 tomato, chopped
1 teaspoon cumin seeds
1 teaspoon red chilli powder
1 teaspoon coriander powder
½ teaspoon mango powder (amchur)
½ teaspoon turmeric
¼ cup dried fenugreek leaves (kasuri Methi (Fenugreek))
Salt to taste
Pinch of sugar
Squeeze of lemon juice
Oil as needed
Water as needed
Fresh coriander to garnish
METHOD
1. Heat oil in a pan. Add green chillies & cumin seeds, let them splutter.
2. Add ginger-garlic paste & onion. Sauté until lightly golden.
3. Add spices (chilli powder, coriander powder, amchur, turmeric, salt, sugar) with a splash of water. Cook until fragrant.
4. Add tomato with a little more water. Cover & simmer on low until soft.
5. Add cooked spinach, fried potatoes, kasuri Methi (Fenugreek), & a squeeze of lemon juice. Add a little water if needed.
6. Cover & simmer on low for 10 minutes to let the flavours blend.
7. Garnish with fresh coriander & serve hot with rotis or naan
