INGREDIENTS
200g Tennis Biscuits100g Peppermint Crisp Chocolate250g Orley Whip ,light whipping(or FreshCream as well..1x 385g Caramel Treat or make your own!!!
METHOD
Whipping Cream and Beating Caramel:Whip the cream until soft peaks form. (I use an electric stand-mixer for about 5 minutes on a medium speed and then speed it up for the last minute or until soft peaks. In a separate bowl, beat the caramel with a fork to loosen and to ensure a smooth texture.
Folding Caramel and Chocolate:Gently fold the caramel into the whipped cream, then add most of the chocolate pieces (set aside a cupful for decoration).
Assemble the layers:Line a 30 x 22 x 6.5 cm dish with a single layer of whole Tennis biscuits. Top with half the caramel mixture, then add another layer of Tennis biscuits. Pour the remainder of the caramel mixture over the second layer of Tennis biscuits.
Chilling:Sprinkle the last of the Peppermint Crisp chunks over the top. Cover with tin foil and chill for at least 7 hours before serving.Also add extra caramel drizzle on top if you like it sweeter 👍Makes 1 large (Serves 10-12 )

INFO & TIPS
How too make your own caramel:
385g Condensed milk
Cook on the stove in large pot for 3 hours,)add more cans if you like..
Add water to the pot add the condensed milk floating at the bottom.
When done cooking leave for 6 hours to cool down completely.
