Cosmopolitan Cuisine VI Recipe Book by Mariam Mahomedy ( Purple )
INGREDIENTS
• 4 cups lettuce shredded• 1 cup carrots, grated• 2 cups cucumber, cut, remove centre and slice• 2 tablespoon coriander leaves, chopped
Dressing:
• 4 tablespoon sweet chilli sauce• 2 tablespoon lemon juice• ½ cup mayonnaise• 2 tablespoon soya sauce• 1 tablespoon brown sugar• 1 teaspoon crushed red chillies• 1 teaspoon salt
• 1 packet 2 minute noodles, broken into small pieces
• 1 cup almonds, halved• 2 tablespoon olive oil• 1 tablespoon crushed red chillies• ½ teaspoon salt
METHOD
1. Combine all the vegetables together.
2. Fry the almonds in olive oil until light gold.
3. Remove from heat and add crushed chillies and salt.
4. Roast the noodles in a dry non stick frying pan until light gold and remove.
5. Just before serving combine dressing with the salad ingredients.
6. Pile salad on a platter and sprinkle almonds and roasted noodles over salad.
