Ingredients
125g softened butter
¼ cup white sugar
½ cup brown sugar
2 eggs
1 teaspoon vanilla essence
1 teaspoon blue gel colouring (I used turquoise 💙)
1¾ cups flour
1 tablespoon cornflour
½ teaspoon bicarbonate of soda
1½ teaspoon baking powder
½ teaspoon salt
1 cup chocolate chips
½ packet Oreo biscuits (chopped)
1 cup mini marshmallows

Method
1. In a bowl, beat together butter, white sugar, and brown sugar until creamy.

2. Add eggs, vanilla, and blue colouring — mix until smooth.

3. Stir in flour, cornflour, bicarb, baking powder, and salt.

4. Fold in chocolate chips, Oreo chunks, and mini marshmallows.

5. Scoop out large spoonfuls (1 heaped ice cream scoop per cookie) onto a lined tray.

6. Top each cookie with extra chocolate chips, Oreo pieces, and a marshmallow.

7. Bake at 180°C for 12–13 minutes until just set and gooey inside.
