Cookies 'n Cream Cuppies

INGREDIENTS

500g vanilla golden cloud muffin mix 2 eggs100ml oil1 cup water1 tub cream cheese1 ½ cups icing sugar60g butter2 teaspoon vanilla essence½ packet oreos (crushed)Mini oreos

METHOD

Beat cream cheese smooth, leave aside
Beat butter and icing sugar together. Add vanilla and beat.
Add in cream cheese and beat.
Add in crushed oreos and mix in.

Beat eggs, water, oil and muffin mix.
Spoon into cupcake liners till ¾ full.
Bake for 15min.
Allow to cool.
Spoon frosting into piping bag or use a spoon.
Pipe or spoon onto cupcakes, decorate with mini oreo.
Store extra frosting in airtight container in freezer.
