1 kilo potatoes. Small bunch of parsley finely chopped. 2 eggs lightly beaten. 200 g feta crumbled. Salt and pepper. Flour for rolling. Oil for frying.
Scrub potatoes and boil with the skin. When boiled remove the skin and mash. Add parsley / eggs feta / salt and pepper and combine. Shape mashed potatoes mixture into walnut size balls roll in flour and fry until golden . Remove from oil and drain on paper towel.
