INGREDIENTS
2 cups caster sugar.
4 eggs.
1 cup oil.
2 teaspoon vanilla.
2 cups flour.
4 teaspoon baking powder.
300ml milk.
ICING.
500g wooden spoon margarine.
4 tablespoon milk.
2 teaspoon vanilla.
500 g icing sugar sifted.
METHOD
In a bowl add caster sugar to eggs and beat with electric beater till fluffy. The add the oil and vanilla and mix with wooden spoon. Add the sifted flour and baking powder little at a time and mix . When all the flour is used and mixed the add the milk and mix well . Place mixture into a lightly greased baking tin and bake for 30 minutes on 180 deg C
For butter icing. Cream margarine till soft and creamy with an electric beater . Add sifted icing sugar little at a time carry on beating the add the milk and vanilla . The icing must not be to stiff .colour icing to what colour you want. The decorate the cake .
INFO & TIPS
I always use foil in my baking pans so that its easy to remove the cakes when its cold just peel out the foil.
The top of this cake is done with rice paper and iced around.
I baked 2 cakes and sandwich together with jam and icing.
