INGREDIENTS
3 cups fruit.
1 cup brown sugar.
1 ½ cups water.
250 g choice butter.
1 teaspoon bicarb.
Boil all the above for 15 minutes.
When cool add
6 eggs.
2 cups flour.
1 ½ teaspoon baking powder.
1 teaspoon mixed spice.
1 teaspoon nutmeg.
1 teaspoon ginger powder.
½ teaspoon salt. Cherries. And almonds.
METHOD
Mix all to the boiled mixture and then pour the mixture
into a round greased tin. Bake for +- 60 minutes or until
cake is done on 180\\\'
INFO & TIPS
This cake can be iced with jam then almond icing and
then plastic icing and decorate as required
