*2 cups maize meal (soaked in 2 cups boiling water, add 1⁄4 teaspoon tumeric, mix and allow to thicken, rest mix for 1 hour)
*sift: 1⁄2 cup chana flour 1⁄2 cake flour 1.5 cups SRF
Add sifted flour to rested mixture above.
*Add 1⁄4 cup sesame seeds *crushed green chillies to taste *1.5 teaspoon ginger *salt to taste *juice of three lemons Mix all ingredients together to make smooth lump free batter.
*Allow mix to stand for 30 minutues before frying.
*Use a tablespoon of dough at a time- using finger push batter into hot oil- fold batter over to make balls.
*Deep fry until golden brown and cooked inside
Serve hot with samoosa dip
