500 ml (2 c) rice, uncooked
30 ml (2 tablespoon ) oil
2 onions, chopped
3 garlic cloves
2 ml (½ teaspoon ) grated ginger
4 chicken breasts, sliced
5 ml (1 teaspoon ) chilli powder
2 ml (½ teaspoon ) cumin seeds
2 ml (½ teaspoon ) coriander seeds
2 ml (½ teaspoon ) ground cinnamon
2 ml (½ teaspoon ) ground cardamom
2 ml (½ teaspoon ) turmeric
handful of raisins
handful of fresh coriander, chopped
Cook the rice in boiling salted water until done.
Heat the oil in a pan, add the onions, garlic and ginger and fry for 2 minutes.
Add the chicken and cook for 5 minutes.
Add the spices and cook for another 2 minutes.
Add the raisins and cooked rice, cover and set aside to steam for 15 minutes.
Just before serving add the chopped coriander.
