~Cream Margarine and Sugar until light and fluffy~Beat in the eggs,Lemon Rind and Vanilla essence~Sift flour and Baking powder together and mix into the creamed mixture alternately with the milk~Pour into a greased 23cm (9inch) loaf tin and bake at 180 degrees (350 F) for ± 1hour

Variation: Cherry Cake
Add 250ml (1Cup) cherries, chopped to the cake mixture and fold in.
* Personal Note : this is a flop proof recipe and turns out perfect every time.
I leave out the Lemon Rinds and substitute with 1/2 cap of Lemon Essence.
