60g roasted macadamia nuts or almonds
125g all purpose flour
½ teaspoon grated orange zest
126g unsalted butter, chopped
1 egg yolk
Icing sugar (to dust)
Preheat oven to 170 degrees (gas mark 3). Lightly grease two
baking trays or put parchment paper.
Place macadamia nuts or almonds in a food processor and process until finely crushed. Sift flour into a medium bowl and add sugar, orange zest and butter. Rub butter into the flour mixture and until it is like
breadcrumbs. Add egg yolk and ground nuts. Mix until combined and you get a soft dough.
Shape level teaspoonfuls of the dough into small crescents and place on baking tray. Bake for 12 minutes or until pale golden.
Whilst the crescents are warm, sift generous amount of icing sugar on them. Put on a wire rack to cool completely.
