RECIPE
4 eggs
1 ½ cup sugar
Beat till light and fluffy then add
1 ½ cup oil
Then add
1 ½ cup grated carrots
2 mashed bananas (mash with fork)
½ cup chopped nuts
2 ½ cups flour
2 teaspoon baking powder
1 ½ teaspoon bicarb
2 teaspoon cinnamon powder
1 tablespoon vanilla
Mix together 4 a few minutes...pour into greased pan,or cupcake cases...bake at 180 for ± 15 minutes...
TOPPING:
Beat together
125g butter and 250g cottage cheese
Then add icing sugar until desired sweetness..add 1 tablespoon vanilla...this is a soft dropping icing..
For a stiffer icing,beat butter and icing sugar like how u would normally 4 butter icing,once light and creamy add in cottage cheese and lightly mix...
