INGREDIENTS
450g ready made shortcrust pastry chilled
A little flour for dusting
4 eggs
2 large onion finely chopped
150ml milk
2 tablespoon chopped fresh basil
175g mozzarella cheese diced
100g tomatoes finely sliced
Salt and pepper to taste
METHOD
1. Preheat oven to 180' lightly grease muffin tins
2. Roll pastry out thinly on a floured surface. Cut using a plain cookie cutter 3. Press these gently into the prepared muffin tin.
4. Put the eggs,milk and a little salt and pepper together in a large jug and beat lightly with a fork. Mix in the onions and basil. Pour the filling into the pie cases then sprinkle the cheese and tomatoes on top
5. Bake for 20min or until pastry is golden and filling is set. Leave to cool in tin for 10min then loosen with a round bladed knife and transfer to a wire rack
