RECIPE
400g baby spinach1 tablespoon butter3 tablespoon olive oil300g leeks, washed and chopped1 tablespoon crushed garlic400g brown mushrooms, quartered Sea salt and freshly ground black pepper to taste 1x recipe cheese sauceGrated cheese to top
Preheat oven to 180Blanch spinach in boilingnsalted eater for 5mins, remove and plunge into iced water
Heat butter and olive oil in a pan over medium heat. Add in leeks and garlic and cook until leeks have softenedAdd mushroomsMix in spinach and season to tastePlace mixture into a baking dishPour over cheese sauce, top with grated cheese and bake for 20mins until cheese browns
Cheese sauce (mornay)1 tablespoon butter1 tablespoon flour1 Cup milk1/2 Cup grated cheese
Melt butter and add in flour, cook for a couple minutes then add in milk, keep whisking until mixture thickensAdd cheese and seasoning
*For the veggies I added in garlic and her grind from woolies as well as robertsons zesty lemon and herb seasoning for braai (bbq)Adjust seasoning to taste
