INGREDIENTS
For Phirni:Milk – ½ litre ( around 2 cups )Sago soaked in water - 1 teaspoonRice flour – 3 tablespoonSemolina - 2 tablespoonSugar – ½ cupElachi (cardomom) powder – ¼ teaspoonRose syrup (to taste)Rose water - ½ teaspoon (for additional flavour - optional)
For decorating:Flaked almondsWhipped cream Dried roses or rose petals
METHOD
1.) Mix rice flour and semolina in ½ cup of milk and without forming any lumps.2.) Heat rest of the milk in on the stove on medium low heat.3.) When it starts to boil ,add the rice flour/semolina paste and cook stirring constantly.It takes nearly 15-20 minutes to thicken.4.) Keep the flame medium low - high to avoid spilling.Stir now & then..5.) When the milk becomes thick add sugar and rose syrup & switch the stove off.Stir well till the sugar dissolves completely.6.) Check for sweetness .Mix in Elachi (cardomom) powder , rose water & leave to set in the fridge.7.) Once it’s set, decorate as desired and serve cold.
