Carrot Cake

INGREDIENTS

1 cup oil,
1 cup sugar,
3 eggs,
2 cups grated carrots,
¾ cup pecans,
3 teaspoon bakng pdr,
1 1/2 Cup flour,
2 teaspoon cinnamon,
pinch salt,
1/2 teaspoon bicarb,
¼ cup water
beat eggs & sugar wel.add oil beat til fluffy.add dry ingrd. Beat,add pecan & carrot.add water last. Bake about 1/2hr.

Deco as desired

METHOD

Topping

1 tub cream cheese, 2 & half cups icing 125g stork butter or any that you can use for baking. Orange zest teaspoon & vanilla essense

Cream the butter & cream cheese with orange zest & vanilla essence then add icing sugar If the consistency too thick just add little milk until it's smooth & easily spreadable

Deco with pecan nuts and walnuts
