If you're like me and love decorating your
own cupcakes, then you'll love this easy
peasy fondant. It can be stored indefinitely
in the fridge and all you have to do to use
it is warm it up a bit in the microwave to
make rolling out easy.
One large packet of pink and white
2 tablespoons water
2 tablespoons butter
about four cups icing sugar
food coloring of your choice
Divide white and pink marshmallows, placing
each color in a separate bowl. Cut them into
smaller pieces being careful to use separate
Put a tablespoon of water into each bowl and
microwave on medium high for about 1-2 minutes
until the marshmallows have melted. Be
careful not to scorch them.
Remove bowl from microwave and stir until the
mixture is smooth and glossy. Stir in 1 tablespoon
butter. Using a mixer, beat in icing sugar
adding 125ml at a time. The mixture will form
a ball in the middle once you'vanilla essence added enough
icing sugar to the marshmallow mixture.
Sprinkle a work surface with icing sugar and
start kneading the fondant, while adding more
icing sugar until it is no longer sticky. At
this point you can add the food coloring of
Wrap the fondant tightly with some cling wrap
and refrigerate overnight.

If you're making one color fondant, you can add the food coloring just before you start kneading it. To roll out, just pop in the microwave for a few seconds on defrost until it is soft enough to roll. Sprinkle work surface with icing sugar and roll out fondant. Can be used to cover wedding cakes and birthday cakes alike. Also press out flowers, teddies or butterflies for cuppie cakes!
