INGREDIENTS
If you're like me and love decorating your own cupcakes, then you'll love this easy peasy fondant. It can be stored indefinitely in the fridge and all you have to do to use it is warm it up a bit in the microwave to make rolling out easy.
One large packet of pink and white marshmallows2 tablespoons water2 tablespoons butterabout four cups icing sugarfood coloring of your choice
METHOD
Divide white and pink marshmallows, placing each color in a separate bowl. Cut them into smaller pieces being careful to use separate knives.
Put a tablespoon of water into each bowl and microwave on medium high for about 1-2 minutes until the marshmallows have melted. Be careful not to scorch them.
Remove bowl from microwave and stir until the mixture is smooth and glossy. Stir in 1 tablespoon butter. Using a mixer, beat in icing sugar adding 125ml at a time. The mixture will form a ball in the middle once you've added enough icing sugar to the marshmallow mixture.
Sprinkle a work surface with icing sugar and start kneading the fondant, while adding more icing sugar until it is no longer sticky. At this point you can add the food coloring of your choice.
Wrap the fondant tightly with some cling wrap and refrigerate overnight.
INFO & TIPS
If you're making one color fondant, you can add the food coloring just before you start kneading it.
To roll out, just pop in the microwave for a few seconds on defrost until it is soft enough to roll.
Sprinkle work surface with icing sugar and roll out fondant.
Can be used to cover wedding cakes and birthday cakes alike.
Also press out flowers, teddies or butterflies for cuppie cakes!
