3⁄4 cup soften butter
1 cup brown sugar
1 extra large egg
1⁄4 cup golden syrup
2 1⁄4 cups flour
2 teaspoon bicarbonate soda
1 teaspoon cinnamon powder
2 teaspoon ginger powder
1⁄2 teaspoon nutmeg
1⁄2 teaspoon salt
Sugar for coating cookies
Preheat oven to 180 degrees
In a mixing bowl mix together the butter and brown sugar for about 1 minute on high , lower speed to medium add the 1 and golden syrup , allow this to mix and become fluffy making sure to scrape the sides with rubber spatula often so that none of the sugar or butter is left un mixed.
Start sifting the dry ingredients in a bowl and gradually add that to the butter mixture . The mixture should be stif .
Using your hand mix the dough for about 1 minute .
In a small bowl add some sugar .
On a baking tray place parchment paper
Start making small size balls dip each ball in sugar and place on the tray that has parchment paper . Repeat until all done .
Now take a glass of water .
Dip your finger in and press ball down half way or more depends how flat you want the cookie .
Make sure each ball is damp.
Place in the oven and bake for 10minutes or until done .
