INGREDIENTS
Ginger snaps

250g butter softened
2 cups brown sugar
2 eggs
¼ cup golden syrup
2 ½ tablespoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon mixed spice
½ teaspoon ground cloves
2 teaspoon bicarb of soda
2 ½ - 3 cups flour
1 cup sugar (reserve)
METHOD
Preheat oven to 180°C.
Cream the butter and brown sugar till pale in colour. Add the golden syrup, egg and beat till combined.
In a separate bowl combine the flour, bicarb, and ground spices. Slowly add to the creamed butter and mix till combined.
Form dough into a ball, cover with plastic wrap and place in the fridge for 30 minutes till firm.
Once the dough has firmed up roll in your palms 2-3cm balls roll in the sugar coating well.
Place the sugared balls on a greased baking tray and flatten slightly place in the oven for 12 – 15 minutes.
