INGREDIENTS
Popeye salad
1 Broccoli head, cut into small florets
1 Punnet baby tomatoes
1 Cucumber
1 Avo
1 Lettuce head or ready mix lettuce pack
½ pack baby spinach
Feta cheese
Pumpkin seeds
Roasted butternut, mushroom salad
1 Butternut, cut into small cubes
1 Punnet mushrooms, cut into quarters
1 Punnet baby tomatoes
1 Cucumber
1 Avo
1 Lettuce head or ready mix lettuce pack
½ pack baby spinach
Feta cheese
Pumpkin seeds
Dressing:
Olive oil
Balsamic Vinegar
METHOD
Arrange the lettuce on a platter top with cucumber, broccoli, avo and tomato. Splinkle pumpkin seeds and feta.
Arrange the lettuce on a platter top with cucumber, roasted butternut & mushroom (I roasted in butter with some crushed chilli and cinnamon), avo and tomato. Splinkle pumpkin seeds and feta.
Combine some olive oil and balsamic vinegar and pour over salad just before serving.
