Easy cook long grain rice Green beans frozen peas baby marrow mint leaves for garnishing!!
DRESSING: 4 spring onions finely chopped 4 tablespoons olive oil 2 tablespoons vinegar ½ teaspoon mustard sauce 2 tablespoons finely chopped fresh mint leaves salt pepper
METHOD: To make the dressing put all the ingredients into a screw top jar and shake until well blended. Cook the rice in a saucepan of slightly salted boiling water until tender.. Drain well and transfer to a large serving bowl Stir in the dressing and leave to cool Cook the peas and beans in a saucepan of boiling water for 2 minutes. Braise the baby marrow in little bit of olive oil and water till tender Mix all the veggies together and stir into the rice! Season with salt and pepper and garnish with mint leaves. ENJOY!!
