INGREDIENTS
Cake :
250g butter - soft
250g Castor sugar
3 eggs beaten
2 teaspoon vanilla extract
3 cups flour sifted
3 ½ teaspoon baking powder
Milk
Icing:
250ml fresh cream
2 tablespoon icing sugar
1 teaspoon strawberry extract
Decoration :
1 punnet fresh strawberries
METHOD
Cake:
1. Preheat oven to 180 degrees and grease a normal size casserole.
2. Mix together butter and sugar until light and fluffy. Add eggs and vanilla, mix until it comes together.
3. Add flour and baking powder little at a time and add milk as well to form a runny mixture.
4. Spoon into casserole and bake for 30-35 minutes
5. Remove and allow to cool.
Icing.:
1. Add icing sugar and strawberry extract to fresh cream and whip until thick. Spread over cake and decorate with strawberries.
INFO & TIPS
Add 2 tbsp of maizena for a fluffier and more light texture.
Add grated or shavings of chocolate to decor.
