Whisk together all these ingredients: 1 and ½ Tablespoon Olive Oil 1 Tablespoon Lemon Juice (Lime Juice may also be used) 1 Tablespoon White Vinegar ¼ teaspoon Paprika Powder ½ teaspoon Salt ½ teaspoon Garlic paste/crushed 1 teaspoon Sumac
For The Salad 1 – 2 Cups Chopped Lettuce ¼ Cucumber Chopped into chunks 4 Cherry Tomatoes, halved/quartered ¼ Red Onion, chopped ¼ Cup Flat Leafed Parsley, roughly chopped ½ Small Pepper (I used a yellow one today, but any colour may be used) Handful of Pomegranate Seeds (optional) “Tortilla Wrap” chunks that have been fried in shallow oil and drained onto paper towel.
JUST BEFORE SERVING * In a large bowl, add all the salad vegetables * Add just a handful of the “Crispy Tortilla Bread” * Add 1 Tablespoon of the Fattoush Vinaigrette * Gently Toss all together * Plate this onto a Serving Platter, scatter over more of the “Crispy Tortilla Bread” and sprinkle more Pomegranate seeds(if using), and the extra Vinaigrette on the side. * Serve this Crunchy Goodness with your favourite Protein meal, or just perfect to enjoy all on it’s own.
