4 gem squash cut into halves 1 bunch spinach washed and chopped 1 tablespoon olive oil 1 teaspoon crushed garlic ¼ teaspoon haldi ½ teaspoon zesty lemon and herb ¼ cup fresh cream 1 tablespoon flour Salt to taste
Steam gem squash I. Water with some water and butter until soft . In a pot add olive oil and garlic allow the aroma to infuse add the haldi and salt as well as chopped spinach and allow this to steam on medium for 5 minutes . Make sure the water has dried up add the fresh cream allow to simmer add the flour to thicken and remove from heat .
Assemble : Place gem squash on serving platter . Add a good amount of spinache in each . Sprinkle cheese optional ( I did not this time )
