1 Small onion (finely chopped)
1 tin chickpeas
1 tin 4 beans mix
3 apples (cubed)
1 green chilli (finely chopped)
3 tablespoon lemon juice
2 tablespoon olive oil
1⁄2 teaspoon salt
Course black pepper (as required)
Lemon pepper (as required)
2 tablespoon brown sugar
Finely chop an onion an add to bowl. Strain chickpeas and beans mix till water is drained out then add to onion. Cube 3 apples and add to above. Toss all ingredients together.
Dressing: Mix all ingredients for dressing and pour over salad and toss. Garnish with freshly chopped coriander and mint.
