RECIPE
Carrot cake

Ingredients:
2 eggs
3/4cup brown sugar
1 1/2 teaspoon cinnamon
1 teaspoon bicarb
1 teaspoon baking powder
11/4 cups flour
2 cups finely grated carrots
¼ cup chopped pecan nuts
I also added ¼ teaspoon all spice and I used 1 ½ Cups if finely grated carrots and I added little milk for a smoother consistency
METHOD:
PREHEAT oven to 180ºC
Beat eggs,brown sugar,oil together
Add in cinnamon,bicarb and baking soda,cake flour and mix
Lastly stir in carrots and chopped pecan nuts
Pour into greased pan Bake at 180 for 35 to 40 minutes remove from oven and allow to cool top with cream cheese
