INGREDIENTS
1 chicken butterflied or cut into pieces
Salt to taste
1 tablespoon ginger garlic
2 tablespoon lemon juice
2 teaspoon chillie paste or magic masala
2 teaspoon fine dhana
1 teaspoon fine jeeroo
1 teaspoon peri peri spice
1 teaspoon cajun spice
2 tablespoon olive oil
sauce:
½ cup mayonaisse
½ cup peri peri sauce
2 teaspoon chilli powder - optional
2 tablespoon lemon juice
2 tablespoon butter
1 teaspoon crushed garlic
METHOD
Preheat oven to 180.
Wash and drain chicken. Cut slashes across chicken pieces. Marinate in spices.
place chicken in a greased pyrex or baking tray.
cover with foil.
bake for 40 -50 minutes.
For sauce: Braise garlic in butter till light pink. Add other ingredients and bring to the boil.
once chicken is cooked and before serving pour sauce over and place under grill.
grill until golden brown.
serve with chips and salad or stir fry.

Stir fry:
Julienne baby marrow and robot peppers and peel Carrot ribbons.Stir fry in olive oil with frozen corn and any other veggies of choice. Season with veggie spice, lemon pepper & garlic salt to taste.
