Falafel Spiced Brinjal Pitas

Falafel (from Cosmo Cuisine 2)
250g dried chick peas, soaked overnight
1 small onion, chopped
1 teaspoon crushed garlic
2 teaspoon crushed Jeeru (Cumin)
2 teaspoon crushed dhana
2 teaspoon ground green chillies
1 ¼ teaspoon salt
1 teaspoon baking powder
4 tablespoon fresh dhania (coriander), chopped
2 large brinjals (sliced)
1 teaspoon chilli powder
1 teaspoon dhana Jeeru (Cumin) powder
1 teaspoon salt
1 tub plain smooth yoghurt
2 tablespoon crushed garlic
Dash lemon pepper
Pinch dhana Jeeru (Cumin) powder
Dash dried mixed herbs
Store bought pitas, warmed, cut in halves
Wash and drain chick peas. Process into a fine paste and remaining ingredients. Process once more and form into small patties or balls. Fry on medium high heat.
Mix all ingredients for sauce.
Slice and submerge brinjal in lemon water. Remove and dry on kitchen paper.
Rub dry spice rub on slices and shallow fry until tender.
Place all falafel, brinjal and sauce in pita and enjoy, may add caramelized onions for extra sweetness.
