1. Wash and drain chick peas. 2. Process into a fine paste and remaining ingredients. 3. Process once more and form into small patties or balls. 4. Fry on medium high heat. 5. Mix all ingredients for sauce.6. Slice and submerge brinjal in lemon water.7. Remove and dry on kitchen paper.8. Rub dry spice rub on slices and shallow fry until tender. 9. Place all falafel, brinjal and sauce in pita and enjoy.10. I sometimes add caramelized onions for extra sweetness.
