INGREDIENTS
Falafel Spiced Brinjal Pitas

Ingredients:Falafel-250g dried chickpeas (soaked overnight)1 onion (chopped)1 teaspoon ground garlic paste2 teaspoon Jeeru (Cumin) powder1 teaspoon dhana powder1-2 teaspoon ground green chillies1 ¼ teaspoon salt Dash lemon juice1 large bunch fresh parsleyPinch turmeric powder½ teaspoon baking powder
Brinjal:2 large brinjals (sliced) 1 teaspoon chilli powderPinch turmeric1 teaspoon dhana Jeeru (Cumin) powder1 teaspoon saltLemon water
Sauce:1 tub plain smooth yoghurt2 tablespoon crushed garlicDash lemon pepperPinch saltPinch sugarPinch dhana Jeeru (Cumin) powderDash dried mixed herbs
Store bought pitas, warmed, cut in halves
METHOD
1. Wash and drain chick peas. Add all ingredients into food processor.2. Pulse a few times in food processor till a fine crumble. Do not make into a paste. 3. Form into small thick patties or balls. If you have the shaper for the falafel it is easier. 4. Fry in preheated medium-high heat vegetable oil till golden & crispy on the outside.Becareful not to over fry & dry out from the inside. 5. Mix all ingredients for sauce.6. Slice and submerge brinjal in lemon water.7. Remove and dry on kitchen paper.8. Rub dry spice rub on slices and shallow fry until tender. 9. Place all falafel, brinjal and sauce in pita and enjoy.10. I sometimes add caramelized onions for extra sweetness.
