BlueBerry buttermilk crumpets
2 cups flour
¼ cup sugar
21/4 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
2 eggs
2 cups buttermilk
¼ cup melted butter/oil, plus some for frying
1 cup blueberries, fresh or frozen
sift together the flour, sugar, baking powder, baking soda, and salt.
Beat the eggs with the buttermilk and melted butter.
Combine the dry and the wet ingredients into a lumpy batter, Do not over mix.Over mixed batter will result in flat, heavy pancakes.
Heat some butter in a non stick pan over medium heat. Spoon batter into the pan and push in some blueberries on the top. Cook for 2 to 3 minutes on each side.
Serve with maple/golden syrup.
