1 red onion1 tray baby marrows1 yellow bell pepper1 dzn baby potatoes/ 3 large potatoes2-4 tablespoon Olive oil1 teaspoon salt½ teaspoon chilli powder½ teaspoon garlic powder2 tablespoon balsamic vinegar½ teaspoon basil ½ teaspoon oregano½ teaspoon chives
METHOD
Set the oven to 180degC.
Parboil potatoes until just done.
Cut pepper into 12 pieces.
Cut marrows in halves lengthwise.
Cut onion into quarters and separate layers.
Combine the vegetables, garlic, herbs, salt, chilli and olive oil in a roasting tin and spread out. Be generous with oil and salt. Every 10 minutes give the veg a good move around. After about 20minutes, add potatoes, mix in well, cook for another 10min and start tasting for done-ness.
