INGREDIENTS
•3 tablespoon ghee (Clarified butter) (Clarified butter)/oil•1.5kg mutton chops (excess fat trimmed off)•2 large onions (sliced)•2 teaspoon cumin seeds•2 cinnamon sticks•5 cardamom pods•3 cloves•5 black peppercorns• 2 bay leaves•3 large tomatoes (liquidized)•1½ tablespoon red ginger garlic masala•1 tablespoon garlic paste•1 teaspoon ginger paste•1 teaspoon chilli powder•1 ½-2 teaspoon fine salt•¼ teaspoon turmeric•2 teaspoon coriander powder•2 teaspoon cumin powder•½ teaspoon black pepper powder•1 tablespoon brown vinegar•1 teaspoon mustard powder•1 liter sour milk•few saffron threads•1 ½ cups frozen peas (optional)•5 large potatoes (cut into big cubes, colored in egg yellow food coloring)•2 slit green chillies attached to stem•2-3 cups basmati rice•chopped coriander•Water as needed
METHOD
1. In a deep pot, braise onions in oil with whole spices.2. Then add in powdered spices and pastes and vinegar, braise till fragrant.3. Add in chops and brown all over.4. Add in water as needes and cook till tender.5. Rinse and soak rice till needed.6. Once liquid has completely reduced, add in liquidized tomatoes, sourmilk, saffron and peas and cook till liquid comes to a boil.7. Add in fried potatoes, slit chillies and the drained soaked rice.8. Mix altogether and cover, cooking on medium heat till liquid has reduced 2/3.9. Drop heat to lowest and allow liquid to reduce completely, and the rice steams and fluffs up.10.
