INGREDIENTS


Recipe from cosmopolitan cuisine
250g chicken fillet cubed
1 teaspoon ginger garlic
1 teaspoon red chiilies
1 teaspoon crushed cumin
1 teaspoon dhana Jeeru (Cumin)
¾ teaspoon salt
2 tablespoon lemon juice
2 tablespoon mayonaise

2 ½ cups onion and tomato chutney (braised onion,cooked with liquidized tomato till thick and seasoned)
Marinate chicken in spices
Add water and cook until tender..add chutney and cook on low heat until u have a thick gravy
remove ½ cup gravy and keep aside
1 cup dhania (coriander) leaves
1 teaspoon garlic paste
1 teaspoon salt
1 ½ tablespoon dhana Jeeru (Cumin)
1 teaspoon ground green chillies
2 tablespoon lemon juice
Liquidize together
Heat oil in a pot,add liquidized mixture and cook for 2-3 minutes
Add 1 ½ cups rice
Salt
And boiling water
Cook on medium heat until rice is tender
Drain and leave aside
To assemble u will need
1 cup frozen corn (boiled)
2 potatoes cubed and fried
½ cup reserved gravy
dhania (coriander),mint and shallot
Boiled egg


METHOD

Grease an oven proof round dish well with oil
Place ½ the rice at the bottom of dish..presh tightly..spread chicken gravy ontop,cover with remaining rice and press tightly with back of a spoon.
Cover with foil and bake for 25-30 minutes on 180.
Remove foil,place a large serving plate ontop of dish,and using a cloth turn over rice to release.
Spread top with reserved ½ cup of gravy..decorate and garnish with corn,potatoes etc..
