Pineapple Fresh Cream Sponge

RECIPE

½ cup oil
1 cup castor sugar
Mix together
Add 4 eggs
2 at a time
1 tablespoon lemon juice
Beat well then add
1 cup flour
2 teaspoon baking powder
Add and mix very well
Slowly add in ½ cup boiling water and fold lightly
Add to 2 greased round pans
Bake in a preheated oven at 180 till a skewer inserted comes out clean,allow to cool
Beat 1 fresh cream with 2 tablespoon icing sugar till stiff
Fold in a tin of pineapple pieces with juice(reserve few pieces for deco)..leave in fridge to stiffen..sandwich and top cake with fresh cream mixture..decorate as desired
