125g butter, softened ½ cup castor sugar 2 eggs 1 medium banana, mashed 1 medium apple, grated 1 teaspoon bicarbonate of soda 1 & ½ cups self-raising flour ¼ cup milk White sugar, to sprinkle
Preheat oven to 180 degrees. Grease a loaf tin. Cream butter & castor sugar until light & fluffy. Add eggs one at a time, mixing well in between. Stir in mashed banana & apple. Add half the dry ingredients until combined, then add the rest of the dry ingredients and the milk and mix until smooth. Pour mixture into the greased loaf tin and sprinkle raw sugar over the top. Bake for 45 minutes or until an inserted skewer comes out clean. Allow to stand in tin for 5 minutes before turning out on to a wire rack to cool. Taste is divine !!!
