2 packets Tennis biscuits
1 and half tins Nestle peppermint caramel
2 x250ml fresh cream
Big slab peppermint chocolate
Whip fresh cream until stiff peaks form. Add the caramel, half at a time and whip into the fresh cream. Add 1⁄4 grated chocolate into the caramel mixture and mix together.
In a medium sized Pyrex dish, line the tennis biscuits, smooth over half of the caramel mixture generously, sprinkle half of the remaining grated chocolate and repeat layers again. Decorate with some gold dust and dark chocolate shavings or leave as is. Best set in fridge overnight. Enjoy!

For a much more decadent tart, you can smooth the remaining caramel on each tennis biscuit, before spreading the caramel mixture.
