☕Preheat oven to 230°C. Place muffin pan in the preheating oven. ☕Whisk eggs till frothy. Add in rest of the ingredients and whisk till batter is smooth. ☕Remove muffin pan from oven & grease with cooking spray, put a teaspoon of melted butter/ghee (Clarified butter) in each muffin cup. ☕Half-fill each cup with batter. ☕Lower oven temp to 200°C. Bake for 15mins till puffed and golden brown. Remove from oven brush with a little melted butter, then lemon juice. Dust with powdered sugar.
