1 kg chicken mince 2 big onions chopped very finely or use a food processor , use a cloth and squeezed out all the onion juice . 3 to 4 tablespoon bread crumbs ( not cornflakes crumbs ) 2 tablespoon robertson chicken spice 1 teaspoon Aromat (a South African Spice) 1 tablespoon shans seekh kebab spice ½ teaspoon black pepper 1 tablespoon garlic 1 teaspoon ginger ground green chilli to your taste a nice big handful chopped dhania (coriander) handful chopped spring onion 2 tablespoon ghee (Clarified butter) 1 egg note: add salt last as the other spices are salty .
flat naan recipe : 2 cups flour 1 tablespoon yeast 2 tablespoon sugar ¼ teaspoon salt mix well make a well in the center .
½ cup milk luke warm ½ cup water luke warm 4 tablespoon oil mix all this and add to flour mixture knead and form a soft dough . close allow to rise 30 minutes to an hour . roll slightly thick and cook both sides until done u can add butter with sesame seeds or olive oil and zaatar .
Add all the ingredients to the mince and with a light hand mix well . place on skewers . add some oil and butter along with ¼ cup water and allow this to steam slightly on low . add some more butter and some sliced jalapenos (optional )and cook until almost done . now squeezed 1 whole lemon , if you do not eat a lot of lemon squeeze only half.

To taste the kebab mix i placed a small piece in the micro for 30 seconds cooked it n tastes to see if the salt and flavors are fine .
