INGREDIENTS
1 kg rice
Soak rice for atleast 2 hours
1kg meat
Boil meat with
3 whole onions
1 whole head of garlic
2 tablespoon saumph
2 tablespoon whole dhana
2 tablespoon salt
Boil in a large pot of water till meat is tender
Take out meat and strain water..keep aside
Chop the soft onions and fry in ghee (Clarified butter) with
2 tablespoon whole Jeeru (Cumin)
10 cloves
15 peppercorns
6 big black Elachi (cardomom)
Add meat with 1 tablespoon ginger garlic
Braise and add
10 chopped green chillies
1 chopped tomato
1 cup sourmilk
braise well
Add rice and drained water
Add little extra water and steam till done
METHOD
Serve with dhai & papar
