Ingredients: 400g microwaveable packet sweet potato cubes 1 avocado (cubed) ¼ cup white beans ¼ head iceberg lettuce (chopped) ½ cup feta cheese cubes
Dressing- 125ml plain yoghurt Pinch salt Pinch sugar Fresh cracked black pepper ½ teaspoon ground garlic 1 teaspoon lemon juice
Garnish- Salted cashews Coriander
Method- 1. Microwave sweet potato according to instructions on packet. 2. Season with salt. 3. Toss avocado in little lemon juice. 4. Mix dressing. 5. Assemble all of the ingredients into a mixing bowl, gently mix. 6. Then spoon over dressing & garnish with coriander & cashews.
